Caryn's Almond Milk recipe
Hey, I just wanted to share with you almond
milk people a trick my kids and I used when they were little and wanted a type
of milk as a comfort food, but were milk intolerant--and we didn't have the
choices now available in the stores.
We would blend a cup of almonds in about
3-4 cups of water depending on the thickness you desire, in a blender starting
low then going up to high speed for a bit until well blended.
Then we would pour some of this mixture
into a clean (only used for this!) knee high nylon over a bowl and "milk the
almond" as we called it. Works great to get the grit out better than most
strainers and the kids loved doing it. They still do.
My daughter (who is a culinary grad) still
loves to make it sometimes as a comfort food. It is very soothing to the stomach
and nerves, and she is sensitive to both dairy and sugars.
You can sweeten this if desired with
whatever you use, or take it straight. With a little vanilla and spices (nutmeg,
cinnamon, etc), it is like an egg nog.
Frozen in popsicle makers is a good summer
treat too for kids (and grown ups).

Linda's Mayo Recipe
1 t. lemon juice
1 egg (I use powdered because I'm very susceptible to salmonella)
2 T. vinegar
1/8 t. dry mustard powder
dash pepper
dash garlic salt
1 cu. oil (I use walnut)
Blend all except oil in blender. Add oil slowly through hole in top.
I make my own mayo because I can't have any of the sweeteners that are in
manufactured mayo. This tastes fine without any sweetener, but you could add
stevia or whatever sweetener you like.

Mayfair-Lennox Salad Dressing
This has been a
family favorite for years. The Mayfair-Lennox was a posh hotel in St. Louis MO
and this was their house dressing. Don't know where I got this recipe (may have
been published in a local paper). It is fine for the liberal HG liberal diet and
with a few tweaks, should do for the HG strict.
1 clove garlic
1 rib celery
1 T. lemon Juice*
1/2 medium onion*
2 oz can flat anchovie filets
1/2 t sugar substitute

This recipe is a take-off on the San Franscisco favorite,
JOE'S SPECIAL. It's quick and easy and I think OK for HG strict and liberal. I
call it:
Jamie's
Mom's Sausage Special
10 oz pkg of frozen chopped spinach
1 pound Italian sausage (our local one is ok for HG strict)
6 eggs, lightly beaten
Put spinach, box and all on a plate and microwave according for as long as
directed When done, remove and drain really well in a sieve or collander. Fry
sausage, breaking it up into small pieces. If you can only find links, remove
from casings before frying. When brown, stir in eggs and spinach. Stir well and
cook until eggs are done. Seasonings can be added as desired.
Servings depend on how hungry everyone is. Reheats well as a leftover.

Linda´s Nuts with Stevia
Throw a handful or two of raw pecan pieces or halves into a microwave safe dish.
Top with a Tbsp. of margarine or butter, sprinkle with cinnamon and dust lightly
with stevia powder. Heat in microwave 45-60 seconds and enjoy.
Yummmm. To us sweet-snack deprived folks, anyway.

Linda's
Dairy-Free HG Chocolate Sauce
2 tsp. (give or take) Wonder Cocoa
1 Tbs. food-grade vegetable glycerin
2 Tbs. margarine or butter (butter has no lactose or casein, so is usually OK
for dairy-free diets)
1/2-3/4 tsp. liquid stevia
Melt about 20 seconds in microwave and stir. Yum.

Crock Pot Chicken
(from Linda's Friend who gave permission to share).
summer sausage, sliced very thin
8-10 boneless chicken breasts
8-10 slices of bacon
1/2 can nacho cheese soup
1/4 cup sour cream
Line bottom of crock with slices of summer sausage. Wrap a lice of bacon around
each chicken breast and place on the top of sausage. Mix soup and sour cream,
adding water if it is to thick. Pour over chicken.
Cook 3-4 hours on
High.

Sweet and Sour Beef
Somewhere between a strict & liberal low-carb recipe.
2 lbs. stew meat
2-3 T. soy flour
1 tsp. salt
1/4 tsp. black pepper
1 T. butter
1 T. olive oil
1 onion (chopped)
1/2 c. sugar free ketchup
2 T. brown Sugar Twin
2 T. Splenda
1/4 c. red wine vinegar
1 T. Worcestershire sauce
1 c. water
salt and pepper to taste.
Mix flour, salt and pepper. Sprinkle over meat. Brown in the butter and olive
oil in a skillet. Place the browned meat in the crock pot, along with the onion.
Mix the rest of the ingredients and pour over the meat. Cook 6-8 hrs. on Low.
Can add vegetables for a different stew.
TIP --- I brown my meat in the crock pot :)

Mock Filet Mignon
1 lb. ground beef
1 T. vegetable oil
1 tbs. salt
1/2 tbs. pepper
1 clove garlic, minced
4 strips of bacon
1 4 oz. mushroom pieces, drained
3 T. butter
1 T. Worcestershire sauce
dash red pepper sauce
Combine meat, oil, garlic, salt and pepper. Mix well. Shape into 4 patties. Wrap
strip of bacon around each and attach with a toothpick. Cook on grill for
10 to 15 mins on each side or to desired doneness.
Sautee mushrooms with the butter adding seasonings you like and serve over your
meat.

Pizza
1/2 to 1 lbs ground beef or turkey
1 cup pizza sauce
handful of pepperoni
1 cup shredded mozzarella ( or mix or add your favorite cheese)
1/2 cup mushrooms
1/2 cup green bell peppers
Flatten ground meat into a round pizza pan. Cook this in the oven for
15 minutes at 375 degrees F. Take out of oven, top with pizza sauce,
cheese and toppings. Cook for another 15 mins.
I use a glass pan to cook it in.
